PETITE BLANCS 2022 – 1 DOZEN

With a back-bone of Swan Valley Chenin Blanc, the free-run juice is stabilised in stainless steel with Margaret River Chardonnay and Frankland River Gewurztraminer skins are added and then fermented with a natural yeast culture.

Like all Break Free wines, there is no filtration or fining and minimal sulphur on bottling to keep the wine fresh and lively.

BLISS BOMB 2022 – 1 DOZEN

Pét-Nat is produced in the méthode ancestral, otherwise known as ‘rurale’, ‘artisanale’, or ‘gaillacoise’. In essence, the wine is bottled prior to fully completing its first fermentation, allowing carbon dioxide to be produced by the natural sugars found in the grapes. Unlike Champagne, Pét-Nat is not disgorged, and may or may not be filtered on completion of fermentation.

Our Pet-Nat is made from 100% Swan Valley (WA) Chenin Blanc from a single vineyard. Minimal use of both insectcides and pesticides, the fruit was picked for acidity rather than sugar levels and transported to Denmark for processing by Clandestine Vineyards contract winemaker Andrew Vesey at Castelli Estate. Cold pressed to preserve aromatics, the juice was fermented in one single stainless steel tank under it’s own wild yeast.

Just prior to fementing to dry, the wine was immediately bottled under crown cap with no further adjustment, filtration or fining to finish the last of the ferment in bottle, allowing for the light carbon dioxide to produce a light fizz.

PINOT GRIS 2023 – 1 DOZEN

Our first vintage of Clandestine Vineyards Pinot Gris is sourced from a single, cool climate vineyard from the King Valley, Victoria.

Cool climate Pinot Gris is cold- pressed to preserve brightness and aromatics. The free-run juice is stabilised in stainless steel before partial barrel fermentation and maturation in old French oak puncheons (on lees) for four months. Lightly fined and with minimal sulphites prior to bottling.

This Pinot Gris pays homage to Alsace, albeit with a King Valley accent – a perfect match with many Chinese, Indian and Mexican dishes, or try with pungent washed-rind cheeses like Morbier, Raclette, Taleggio, Munster and Livarot.

CHARDONNAY 2021 – 1 DOZEN

Bright with a light green hue, the bouquet is an enticing mix of flintstone, cashew and citrus, this follows onto the palate with grapefruit intensity and depth of flavour, held in check by tightly wound acidity. The oak plays its part in a supporting role, which allows for a long clean and delicious finish.

CHARDONNAY 2022

This 2022, the third vintage of Clandestine Vineyards Chardonnay follows a more linear style rather than the full, buttery and oaky styles. In other words, the vineyard, the region and the fruit is the star, not the heavy-handed winery technique.

The single-vineyard location known as Knotting Hill in Wilyabrup, Margaret River is owned and cared for by vigneron Michael Gould and planted exclusively to the Gingin clone, known for its higher natural acidity and aromatics. Combined with the proximity to the Indian Ocean, the vineyards and resulting Chardonnay fruit also displays maritime flavours and salinity – similar to Chablis.

Eight-hour maceration time on skins, prior to tank pressing for a light settling, then a portion of the cloudy juice was run to the barrel and the balance to multiple small tank fermentations. Our 25 % new French Mercurey oak barriques (75% 2nd and 3rd use) and ten months maturation in the same oak gives depth and maturity to this wine. No lees stirring or malolactic fermentation, a gentle fining and minimal sulphur on bottling to ensure freshness. Vegan.
